How to prepare millet idly and dosa batter?
Ingredients:
1. Any millet 3 cups
2. Idly rice 1 cup
3. Urad dal 1 cup
4. Methi seeds 1 tsp
Preparation:
Separately wash & soak millet & rice in one bowl, urad dal & methi in another bowl for 4-5 hrs. Grind into batter, add salt to taste & ferment it. You can make Idly, dosa, paniyaram, uthappam with this one batter.
Millet Pancake
1. Any millet flour 2cups
2. Riped Bananas 3
3. Cardamom powder 1/4tsp
4. Salt pinch
5. Powdered nuts 4tbsp (optional)
6. Jaggery powder or Dates puree -according to taste Ghee to fry the pancake
7. One egg is optional for making pancake
8. Milk 4tbsp
Preparation:
Mix all the ingredients except ghee & make it into a smooth batter. Dosa consistency batter. Make pancakes & drizzle them with butter or honey before serving.
Browntop Millet Spicy Gruel /Kanji
Preparation
Soak 1 cup of cleaned, washed Browntop millet for 6 hrs. Take a heavy bottom pan, add 1tsp oil &1tsp of ghee. Add small piece of cinnamon, 1 clove, 1 elaichi, 1/2tsp each of fennel , jeera, methi seeds. Add finely chopped onion, garlic, ginger, tomato, carrot, beans, greenpeas, cauliflower, & cabbage. Saute well. Add 2 greenchilly & pinch of turmeric powder. Add 1/4 cup of Moong dal & soaked Millet. Mix well. Add 5 cups of water, salt to taste. Mix well. Add pudina & coriander leaves. Cook well. Kanji should be soft in texture.
Once done serve plain or Mix with coconut milk or plain milk.
Note:
Everyone thinks Kanji is always a bland diet, meant only for sick people , diet conscious people, or those who are following weight loss journey. But this Browntop millet Kanji is totally different, loaded with vegetables, lentils ,spices . A complete wholesome meal. Made this one like the famous Ramzan Nombu Kanji.
Non vegetarians include shredded chicken while making along with vegetables. Reduce the quantity or number of veggies . Apt food for the monsoon days.
Banana flower Thuvayal
Saute finely chopped banana flower, shallots, tomato, red chillies, garlic, handful of friedgram , salt & curry leaves. Make Thuvayal (chutney) & serve along with Kanji.
